SPINACH AVOCADO dip with YOGURT – rich in vitamins and minerals

This is a very savory and healthy recipe that you can try for breakfast or for any other part of the day.

It can be served as a dip, on toast, crackers or raw veggies, or it can be used as a dressing for salads, sandwiches or wraps.

The combination between spinach, avocado and yogurt is perfectly saife. According to nutritionists, dairy products make a healthy pair with greens, vegetables or fruits.

Avocado is one of the healthiest foods on the planet due to its high nutritious content. It deserves a better place on our plate.

Despite the fact that it’s just a fruit, avocado provides a wide range of precious nutrients, including antioxidants, protein, fiber, fats (the good ones). It contains nearly 20 vitamins and minerals.

Spinach with yogurt and avocado – recipe

Adjust the amount of ingredients if you’re making this dish for fewer people.

Ingredients

• 2 big avocados
• 300 g frozen spinach (or 5 fresh leaves)
• 70 g greek yogurt
• 2 scallions
• 1 ¼ tbs lemon juice
• ½ garlic powder
• 2 tbs grated parmesan
• salt and pepper

Method

Place all the ingredients (except for the spinach) in a food processor or blender – the chopped scallions, then the avocado flesh, the yogurt, the parmesan, the lemon juice – freshly squeezed, the garlic powder, the salt and pepper.

Mix a few seconds on high speed until you get a creamy consistency. At the end, incorporate the spinach.

If you’re using frozen spinach, let it thaw and squeeze it tightly. If you’re using fresh spinach, wash the leaves carefully, chop them and add them to the blender.

Pulse just a few times, so they won’t get mushy.

Transfer the dip in a bowl, jar or casserole and place it in the fridge. It will be even tastier if it sits there for a few hours before serving.

Michelle Dudash nutritionist says that this meal can provide big doses of vitamina A (85% of daily recommended intake), vitamina K (180% of DRI) and vitamina B9 (25% of DRI).

It also contains potassium, proteins, fibers and calcium.
