Homemade ice cream is far more better than the store versions firstly because it contains only the ingredients you want it to contain.
This ice cream recipe is extremly easy to make at home. It has so many health benefits: it’s sugar free, egg free and dairy free. It is definitely a better option for those who are on a diet. Banana ice cream has a natural sweet flavor and it’s perfect for the kids.
Peanut butter banana ice cream
• 3-4 bananas
• 100 g peanut butter
• 300 ml coconut milk or coconut cream
The coconut milk/cream must be kept in the fridge until you are ready to use it in the recipe. Coconut products maintain solid at low temperatures and become liquid at high temperatures.
Beat the coconut milk or coconut cream with a hand mixer until you get a nice fluffy texture. Break the bananas to pieces and add them to the mix, as well as the peanut butter.
If you wish to make the ice cream sweeter, add a few teaspoons of honey or another natural sweetener. Mix a few seconds.
At this moment you can add other ingredients, such as raisins, peanuts, walnuts, pistachios, cranberries and other dry fruits. If you want to get a „chocolate” ice cream, add a few tablespoons of cocoa powder or carob powder – this one is more suitable for children, since it has no cafeine.
To give it a distinct flavor, add vanilla, rum, lemon extract etc. Pour the mixture in plastic casseroles or other recipients. Place the lid and put the ice cream in the freezer for a few hours.
Use an ice cream machine, and you will get a creamier version.
