– 2 teaspoons of parsley, thyme or basil

– 1 – 2 liters of water
Let the onion, carrots and celery fry in the olive oil for a few minutes. Add 2 garlic cloves and let them fry for another 2 minutes. Add the water and the rest of the ingredients. After it starts boiling, let it simmer on low heat for about 1 hour or until the vegetables are soft and boiled. When the soup is ready, you can add the herbs and the other 2 garlic cloves. You can also add a little bit of apple cider vinegar for the soup to be even more delicious. Serve it warm, simple or with skim yogurt or sour cream.
