  • 9 fresh chestnuts
  • One tablespoon of dried cranberries, one of parsley, one of white wine vinegar, one of olive oil
  • 4 or 5 drops of hazelnut oil
  • 100 grams of butternut squash, 50 grams of unsalted butter, 80 grams of caster sugar
  • half of a red onion, one sprig of rosemary, one orange, two sprigs of thyme, one cinnamon stick, one or two small quails, two star Anise.
  • one teaspoon of wholegrain mustard, one of honey
  • alt and pepper


Boil 500 ml of water and immerse the ingredients in the water. After that, allow the ingredients to cool off. Place the spatchcocked quails in a bowl, cover them with the cooled brine and place them in the refrigerator for half an hour.

After that, season the quails and cook them for 3 and a half minutes on each side.

Meanwhile, fix the salad without the addition of the butternut squash.

After you whisked the dressing ingredients thoroughly, place the butternut squash in the mix and let it soften for 5 minutes, then add the dressing to the salad.

Chop the chestnuts and cook them in oil for only one or two minutes.


The quails are placed in the center of a plate and the chestnuts are drizzled on it.
